Single Origin - Ricardo Zelaya

Welcome back, Ricardo. 

When we first launched Harken, we had two lovely coffees from Mr. Zelaya in Antigua, Guatemala, and have been eager to get our hands on some fresh crop from him. 

Our importer has had a relationship with this farm and its passionate owner for decades, and our Head Roaster has worked with their coffee for years. So when we found out that they had just 4 bags of a really great coffee set aside that we could pick up, we jumped at the chance.  

This Caturra varietal was picked and processed separately, with the intention of entering it into the Cup of Excellence competition.  In the end, Ricardo decided not to enter this particular lot and instead offered it up to our importer. 

It's a classic Guatemalan, really delicate and clean with lovely nutty notes, and of course being from Ricardo it's particularly pleasant.  We notice notes of toasted marshmallow, nectarine, orange, and vanilla wafer.  It's ideally suited for filter, but would also be lovely as a really light and clean espresso. 

 

We purchased this coffee for $4.65/lb USD with the knowledge that our importer paid a fair price, well above market rate for this coffee. 

 

A note on roast dates: 

Contrary to most coffee myths (based off old information), it's best not to use coffee that is too fresh. For espresso, we recommend using coffee between three days to four weeks old, while filter and drip coffee it's best if the beans are three weeks to twelve weeks from the date of roasting.

If you would like your coffee already rested, please let us know in the comment section of your order and we will do our best to fulfill your order with rested coffee, if we have it available. Please note that based on fluctuating order amounts, we won't always have rested coffee available at the time you order, and you are welcome to reach out to us to check on our inventory levels for rested coffee before ordering.
