Special Selection - Ashok Patre, Black Honey

This is a coffee we have been really excited to release to you all. We sourced it through one of our good coffee friends, Damian Durda who is the green buyer and head of quality control from Nemesis Coffee, who are just about to launch their own roastery. They had some bags to spare and we scooped them up. 

Coffee from India doesn't have the best reputation, and is actually hard to find in the specialty coffee world. But Damian is involved in working with Ashok and his team at the farm and they are doing some great work planting different varietals, monitoring their soil quality and doing some meticulous fermentation and processing. The result is some of the best quality green we have seen. 

This particular coffee is one of two from Ashok we have brought in this year. These beans were processed at Ashok's farm using a Black Honey process.  This doesn't actually use any honey, but a significant amount of the fruit was left on the cherry (but not all of it like would be the case with a Natural Process), before it was left in the sun for a month. This causes the fruit to ferment and get sticky like honey, and imparts more sweetness in the bean.  

We notice a lovely sweetness that makes us think of peaches and cream, nectarines and caramel, as well as a lovely American oak like quality you find in white wines. 


A note on roast dates: 

Contrary to most coffee myths (based off old information), it's best not to use coffee that is too fresh. For espresso, we recommend using coffee between three days to four weeks old, while filter and drip coffee it's best if the beans are three weeks to twelve weeks from the date of roasting.

Please note that based on fluctuating order amounts, we won't always have rested coffee available at the time you order, and you are welcome to reach out to us to check on our inventory levels for rested coffee before ordering.
