Special Selection - Alejo Castro Natural

Once again, we are proud to feature coffees from our valued partner and friend, Alejo Castro & his family. Alejo Castro is the fifth generation descendant of renowned coffee pioneers Alejo C. Jimenez and Wilhelm Kahle. Alejo's ancestors planted some of the first specialty coffee plantations in the early 1900s with the aim to produce the best coffee in the world. With over 200 years of family tradition in trading specialty coffee, Alejo's mission for the farm has been exclusively focused on improving coffee quality while making a positive impact on the environment. The highly fertile volcanic soil combined with the mill's impeccable processing methods have produced a history of award-winning coffees in Costa Rica.
From the farmer, Alejo:
"We measure brix content in order to know when to start harvesting the coffee. Then we bring the cherries to the mill where we separate floaters and then we bring them to the drying patio where we don´t move them for 2 days so we can have fermentation to have the natural flavour we are looking for. Depending on the thickness of the layer and the time we give the coffee without moving it will change the intensity of the fermentation. After this we start stirring the coffee every day from 8am to 2pm and then we cover it with plastic. It takes between 13 to 15 days (depending on the climate) to have the final point of humidity we are looking for so we can take the coffee to rest for 1.5-2 months before we start preparing it for export. In the dry mill we sort the beans by size, density and colour."
The Vulcan Azul farm is world renowned for its quality and beautiful coffees. We tasted this selection on a table of some really stellar coffees and it really blew us away. Really poignant flavours that come out so juicy and vibrant, a beautiful mouthfeel and a really, really lovely sweetness.
Price paid for the coffee: $6.22/lb USD = $18.40/kg CAD not including customs and freight.
We applied our standard mark up we use for all coffees, meaning even though this coffee is more expensive, we make the exact same amount as any other of our coffees; the price is based purely on what we paid for it.
As with all of our Special Selection Coffees, we are adding an additional $00.50 to the price and then donating $1 from every purchase to the Portland Hotel Society who help support the residents of the Downtown East Side here in Vancouver. Supporting our local community is as important to us as supporting the farmers. PHS does a lot of amazing work to help provide housing, healthcare, harm reduction and health promotion for some of the most vulnerable and under-served people in our community.
A note on roast dates:
Contrary to most coffee myths (based off old information), it's best not to use coffee that is too fresh. For espresso, we recommend using coffee between three days to four weeks old, while filter and drip coffee its best if the beans are three weeks to twelve weeks from the date of roasting.
If you would like your coffee already rested, please let us know in the comment section of your order and we will do our best to fulfill your order with rested coffee, if we have it available. Please note that based on fluctuating order amounts, we won't always have rested coffee available at the time you order, and you are welcome to reach out to us to check on our inventory levels for rested coffee before ordering.
