From Yirgacheffe, and processed at the Aricha washing station, in Ethiopia.This is a combination of two types, 74110 and 74112 of an unclassified local varietal and is a real stunner. It's big, bold and full of funk, super sweet and jammy but still balanced.
It is a natural, anaerobic fermented coffee, from second generation producer Faysel Abdosh. Anaerobic fermentation involves letting the cherries float in water in a vessel that has had the oxygen removed, which changes how the fermentation occurs, it often creates wine-like results.
Aricha is an area known for producing some of the finest coffees in Ethiopia. Mr. Faysel is a producer that focuses on cultivating high quality lots, and this coffee is no different; it in fact recently won the 2019 Ethiopian National Taste of Harvest competition with this coffee.
The quality in the final cup can be accredited to the highly experienced farmers throughout the surrounding area of Aricha. Mr. Faysel believes the advanced knowledge and efforts of these farmers are the reason why they are producing such excellent coffees.
A note on roast dates:
Contrary to most coffee myths (based off old information), it's best not to use coffee that is too fresh. For espresso, we recommend using coffee between three days to four weeks old, while filter and drip coffee it's best if the beans are three weeks to twelve weeks from the date of roasting. We offer the option to select coffee that we have set aside to let rest so it's ready to go when you order it (recommended if you plan on using it for drip or filter coffee, while for espresso it's better to order the standard option).
