First roast: August 17th

We love this coffee because it exemplifies all the things we love from a Kenyan coffee; a lovely mouthfeel that highlights a full body and nice juiciness. We also notice pleasant black tea notes and a really interesting spiciness that makes us think of cinnamon candies. Rounding out the cup is strawberry and brown sugar sweetness.

A note on the coffee from our importing partner Red Fox Merchants:

After picking, ripe cherry is brought to the factory by smallholder farmers, before it undergoes processing to remove the skin and pulp – known as the wet processing method. The nearest water source is the Kangunu stream, and the factory is dependent on electrical pumps to move water to reservoir tanks before using it for processing. Water is also recirculated for conservation. The factory is using a disc pulper with three sets of discs to remove the skin and fruit from the inner parchment layer that is protecting the green coffee bean.

After pulping, the coffee is fermented overnight to break down the sugars, before it is cleaned, soaked and spread out on the raised drying tables. Time on the drying tables depends on climate, ambient temperature and volumes under processing, and can take from 7 to 15 days in total. Kenyan coffee is undeniable: unique, powerful flavors that can’t be found anywhere else in the world. Using our extensive network, we selected a small volume of the absolute best of the best.

Flavors tend to run the full sensorial gamut — from dark fruits to refreshing citrus, from raw honey to dark muscovado sugar, and from a syrupy mouthfeel to a mouthfeel of fresh cream.

We paid $4.85 USD/lb for this coffee.

A note on roast dates:

Contrary to most coffee myths (based off old information), it's best not to use coffee that is too fresh. For espresso, we recommend using coffee between three days to four weeks old, while filter and drip coffee it's best if the beans are three weeks to twelve weeks from the date of roasting. If you would like your coffee already rested, please let us know in the comment section of your order and we will do our best to fulfill your order with rested coffee, if we have it available. Please note that based on fluctuating order amounts, we won't always have rested coffee available at the time you order, and you are welcome to reach out to us to check on our inventory levels for rested coffee before ordering.
